Pimm's Cup

With summer in full swing and warm evenings perfect for sitting outside, there is nothing like enjoying  a refreshing summer cocktail to complement the weather!

A few summers back when I was in London visiting friends, I noticed that everywhere I went, there was this drink called Pimm's Cup.  I had never had it before (I know, weird) so I decided to indulge a little and give it a go! After that first sip, addiction settled in! I loved how refreshing the drink was and have been recreating ever since my return home.

The great thing about Pimm's is that it is not a really sweet drink like many mixed cocktails out there.  It is perfectly light and refreshing, and you can toss in any fruit that you may want, although I try to make it as true to the traditional way as possible.

Pimm's Cup

Ingredients (1 serving):
-2 ounces Pimm's No. 1
-4 ounces ginger ale (or carbonated lemonade or lemon/lime soda)
-Cucumber peel or slices
-Orange slice
-Lemon slice
-Strawberries
-Apple slices
-Mint for garnish
-Ice
*Please note, all of the fruits listed above are optional, although Pimm's is usually always made with cucumbers and at least a lemon or orange slice.  When adding fruit, since this is for one serving, you only need a slice or two of each fruit*

Directions:
Fill a glass with ice.  Put the fruit slices in the glass. Pour the Pimm's in the glass and then finish off with the lemonade or soda.  Garnish with mint.

Grab that glass, go outside, and enjoy!
